I found this on my new favorite site, Pinterest. I haven't tried them, so I'm not sure how crispy they would come out. I have a feeling that mine will be well cooked, floppy carrot slices. Lol I've been trying a lot of different recipes lately that I'm too embarrassed to post for you guys. Lol So give this one a try and tell me how it comes out.
Peel carrots into thin slices
Toss slices into olive oil and salt
Bake at 350 for 12 minutes
Cool and enjoy
